The reasons of different oysters taste

Location

The distinctive flavor of an oyster has a lot to do with where it is caught. The salinity level in the seawater is an important factor in the salinity of oysters, as these delicacies are both delicious appetizers and effective water filters. Fresh Maine bivalves give a salty taste to the tongue and often remind dinner guests of long beach days spent in the water. To accentuate their salty flavor, frothy, acidic drinks are the perfect accompaniment to oysters.

Temperature

Ice cold temperatures not only keep oysters fresh and ready for a satisfying slurp, but also add a crisp, sweet flavor. Water temperatures vary greatly from coast to coast; that's why New England catches tend to have a cleaner, more distinct flavor. Oysters originating from warmer waters (such as the Gulf) often introduce a coppery flavor and have more meaty texture. So in this article, we'll help introduce you to the types of oysters.

The types of oysters

Pacific Oysters

They are the most common type of oyster farmed on the Pacific Coast of the United States. Pacific oysters have a shell with naturally ruffled edges and are usually longer lengthwise than other types of oysters. Like other species, Pacific oysters have a different mix of flavors, but they have a sweeter, less salty taste than Atlantic oysters. Some also have a creamy and honeyed flavor.

Atlantic Oyster

Atlantic oysters are native to North America and grow along the continent's Atlantic coast and near the Gulf of Mexico. You'll easily distinguish them from Pacific oysters, as they tend to be significantly larger and teardrop-shaped. The shells are also smoother and more uniformly brown or forest green in color. Atlantic oysters also taste noticeably saltier than Pacific oysters, but have a clean, mineral accent and a salty finish.

Kumamoto Oyster

Kumamoto oysters are small, with deep bowl-like cups and artfully carved shells. They usually taste creamy or buttery, with a distinctive but mild nutty and honeyed flavor. The mild flavor makes them perfect for a first time meal. 

European Flat Oyster

European flat oysters have smooth, saucer-shaped shells. The cup is very shallow and has a seaweed green appearance. This can be a slightly difficult problem for fresh people as they have the boldest flavor of all oyster types. They come with a meaty, somewhat crunchy texture and a strong seaweed flavor. But due to overfishing, they are now rare.

Olympia Oyster

Olympia oysters are indigenous to the Pacific West Coast. Remarkably, they were once thought to be extinct until they appeared in the Pacific Northwest. Unfortunately, however, only a few farmers are currently cultivating them. They are the smallest of all oyster types and may take up to four years to reach full size. They have a creamy texture with sweet celery and a slightly metallic top.
